February marked the bicentennail birth of Charles Darwin, who said, ‘There is grandeur in this view of life... from so simple a beginning, endless forms most beautiful and most wonderful have been and are being, evolved'. This rings true with the evolution of the potato, which has, over centuries, evolved from a humble food staple into an essential culinary ingredient in today's foodservice industry and on the family kitchen table. Canada produced nearly five million metric tonnes (MT) of potatoes in 2006, as the 12th largest potato producer worldwide. The potato is a priority vegetable crop in Canada, accounting for 35 per cent of all vegetable farm cash receipts in 2006, according to Agriculture and Agri-Foods Canada (AAFC) data.

Steven B Johnson PhD is a crops specialist and extension professor with the University of Maine in the United States. We asked him what it takes to grow the perfect potato and what the chances of genetic modification would be.
Is Genetic Modification a viable option for potato production: are there benefits in terms of nutrition, yield?
GM potatoes are a viable option for potato production. Modifications to the nutritional value of the potatoes are certainly a possibility. Reducing pesticide use and protecting the stored crop are great opportunities for GM potatoes. Consumer acceptance is key to the future of GM potatoes.
