U.S. Potato Processing Use Rises 5% as Sales Value Falls

U.S. potato processing use rose 5% in 2025, while the value of potatoes sold fell 9%, according to USDA’s Potatoes 2025 Summary, released on September 25.
Processors used 286 million hundredweight (cwt). Frozen French fries and other frozen products accounted for 173 million cwt, up 6%, while chips and shoestring potatoes used 58.3 million cwt, up 5%. Dehydration use declined 1% to 42.1 million cwt.
Total potato production fell 1% to 418 million cwt. Harvested area contracted 3% to 903,200 acres, partly offset by an eight-cwt increase in average yield to 462 cwt per acre.
The value of potatoes sold declined to USD4.21 billion. The average price fell USD0.90 to USD10.80 per cwt.
USDA separately reported that growers in the 13 estimating states sold 267 million cwt of raw potatoes to processors from the 2025 crop, down 1%. That crop-sales measure is distinct from the report’s processing-use total, which increased.
