Provisur Highlights Versatile Refining Systems In Berlin

Provisur Technologies will use its presence at Fruit Logistica to underline the growing overlap between fruit processing technologies and industrial potato applications, particularly in areas such as mash preparation, specialty potato products and value-added ingredient streams.
While Fruit Logistica is traditionally associated with the fresh fruit sector, Provisur’s portfolio on display is closely aligned with technologies already familiar to potato processors. At its booth, the company will highlight modular production systems designed for compote, mash and juice, built around refining technologies that are equally applicable to cooked and semi-processed potato products.
Central to the presentation are Provisur’s STS®, Barracuda® and Hoegger® refiners, systems that address a shared challenge across fruit and potato processing: the efficient separation of soft and hard components while maintaining product quality, yield and consistency.
STS Refiners: Throughput And Hygiene For Mash And Puree Applications
The STS 800, STS 2000 and STS 3000 refiners are positioned as high-throughput solutions for a broad range of puree and mash applications. Although widely used for jams, compotes and vegetable sauces, the technology translates directly to potato processing lines producing mash, specialty bases or intermediate ingredients.
In operation, product is fed into the refiner where a flexible pressing belt conveys it against a perforated drum. Soft components pass through the drum, while skins or other hard fractions remain outside and are removed by a scraping knife. The straightforward mechanical layout and robust construction are designed to simplify cleaning and maintenance, supporting hygienic operation in high-volume environments.
The STS 2000, introduced as a new generation refiner, is positioned to offer higher throughput while maintaining tight control over product quality—an aspect increasingly relevant to potato processors seeking uniform texture across multiple downstream applications.
Barracuda: Modular Systems For Smaller Batches And Premium Products
For processors operating at lower capacities or targeting premium and artisanal segments, Provisur will also highlight the Barracuda refiner. The system is designed for gentle product handling, using a low-RPM, single-screw feed to process both fresh and cooked raw materials.
With capacities ranging from small batch volumes up to industrial throughputs, the Barracuda platform is presented as a flexible option for processors diversifying their product portfolios. Its ability to handle fibrous materials and operate across a wide temperature range aligns with emerging potato applications beyond standard frozen products, including chilled, fresh-prepared or hybrid vegetable offerings.
Provisur will also underline its testing and demonstration capabilities, available through the company’s Innovation Center in Plailly, France, or directly at customer facilities—an approach aimed at reducing development risk when adapting fruit-derived technologies to potato lines.
Hoegger Refiners: A Familiar Name In Potato Processing
Of particular interest to the potato sector are the Hoegger PS2000 and PS4000 refiners. Already well established in potato processing, Hoegger technology is presented at Fruit Logistica as a bridge between fruit and potato applications rather than a departure from Provisur’s core markets.
Hoegger systems are designed to deliver high yield and consistent quality when processing soft, cooked products. In potato operations, they are commonly used for separating skins, dark spots and other unwanted components, a capability mirrored in fruit applications where pits, stems and fibers must be removed.
The defining feature of Hoegger technology is its delta pressure sensor system, which allows extremely low and constant processing pressure. Combined with controlled knife head rotation, this enables precise texture management—an attribute valued by potato processors supplying customers with tight specifications for mash, flakes or further-processed ingredients.
The machines are also positioned as operator-friendly, with straightforward cleaning and low operating costs, supporting fast returns on investment in both fruit and potato environments.
Converging Technologies
By framing its Fruit Logistica presence around systems already proven in potato processing, Provisur signals a broader convergence within the fresh and processed produce sectors. For potato processors, the technologies on display reinforce how equipment originally developed for fruit applications can support diversification, premiumisation and efficiency gains across modern potato lines.
