Boema Food Processing Steam Peelers Unveiled at Anuga FoodTech 2024

The Boema SPB series of steam peelers, famous for the innovative rotating basket that was the first to introduce the separation between condensate and product, has been completely renewed with the introduction of the new SPB100 and SPB200 series.
The SPB100 series steam peelers are dedicated to the processing of delicate fruits and vegetables, while the SPB200 series steam peelers have been designed to process potatoes, roots, tubers, and vegetables of a more solid nature.
The new Boema steam peelers work in batches according to a cycle divided into phases that exploit the principle of pressure difference. They are highly automated, through in-house software, which allows complete remote management and assistance, in case of need.
The new SPB100 series steam peelers consist of a pressure vessel with a rotating inner basket. The rotating inner basket allows excellent steam circulation, prevents air bubbles from forming inside the container, and moves the product facilitating the action of steam. The rotation of the basket also allows excellent condensate drainage, so the product to be peeled is never submerged, consequently, heat exchange is facilitated by decreasing the steam exposure time. The internal basket was studied to preserve the integrity of the most delicate fruit and vegetable products, so as not to dent and ruin them.
“With steam peeling the organoleptic characteristics of the processed products are preserved thanks to the absence of chemicals, with consequent maintenance of color, taste, and more natural fragrance. There is also less organic matter dispersed in the process wastewater and maximum hygiene thanks to the separation of the peel from the product,” according to a recent document released on the Anuga FoodTech 2024 website.
The SPB100 series steam peelers are completely made of stainless steel and require less maintenance than mechanical peelers, which have a longer downtime.
By using this steam pressure peeling technique, there are maximized work yields and reduced cycle times, in addition, they are very flexible, and they allow you to process bulk product, not necessarily pre-calibrated, both whole and half, with or without the stone.
The Boema solution offers a low cost of ownership; with attention to lower water consumption, resulting in lower wastewater disposal costs. In addition, being interchangeable with a traditional chemical peeler, it allows without modifying the layout of the entire process line, if any, to be inserted into the line for an eco-sustainable and product-friendly peeling technological change.
A Single 360 Degrees Rotating Pressure Vessel for the SPB200 Steam Peeler
The new SPB200 series steam peelers are characterized by the presence of a single pressure vessel that rotates 360 degrees, allowing high production. By rotating the container, it promotes the homogeneous distribution of steam between the product and the detachment of the entire peel. The rotation also has the advantage of preventing parts of the product from being immersed in the condensate collected at the bottom of the container, which would cancel out the depressurization effect on the product.
The SPB200 series steam peelers are completely made of stainless steel to guarantee the best hygienic performance on the market and long life.
“The advantages of steam pressure peeling are numerous. Working at high pressure, the ‘cooking ring’ of the product is thinner than with a low-pressure peeling; therefore we can provide a better-peeling yield than abrasive or mechanical methods that remove even a portion of the pulp, resulting in considerable waste. Cycle times are reduced to a minimum thanks to steam injection and exhaust systems specially designed to speed up these phases. High vapor pressure produces positive effects only if the vapor flow is rapid,” the press release reveals.
The SPB200 series is designed to meet market demands such as maximization of peeling yield thanks to better steam diffusion and penetration around the entire product, increase in production capacity, extension of production shifts (24/7), and reduction of maintenance times and costs.
