Ulrick and Short Launch Sweet Spud Starch
Ulrick & Short are on target to launch the first functional clean-label sweet potato starch in commercial quantities later this year.
The company developed the starch, which will be cheaper than the waxy maize variety and is not genetically modified, with its Brazilian partners.
It is anticipated the first crop will be harvested in Brazil with the product hitting the shelves by October.
The starch is expected to be more expensive than standard potato starch but will have different properties making it a prime product for use in added value soups, sauces and ready meals.
